Cut the fresh tuna into pieces of the desired size and place them in the jars. Add a pinch of coarse salt to each piece and cover completely with extra virgin olive oil, making sure the tuna is well immersed. Close the jars with their lids, sealing them carefully.
Place the jars in Fresco® and select the ‘Low temperature cooking’ function, setting the temperature to 75°C for 50 minutes. At the end of cooking, cool the jars immediately to +3°C to preserve freshness and quality.
