STEP 1: Dough preparation
Pour the almonds in a mixer and blend together with the sugar. In a bowl add the soft butter cut into pieces, the flour and chopped almonds and mix well with your hands. Add to the dough the peel of half a grated orange and a pinch of salt. Knead everything until you get a single stick, place it in a plate and cool it quickly in Freddy® with the function of blast chilling.
STEP 2: Biscuits’ preparation
When the dough has hardened, divide it into many sticks and then obtain from the latter portions of about 6-8 g of dough. Form balls, place them on a plate covered with oven paper and cool them quickly in Freddy® with the function of blast chilling for 15 minutes. Bake the checkers in the ventilated oven preheated to 135°C, for 15 minutes.
STEP 3: Fill the kisses of Dama
Melt the chocolate in a bain-marie. When the biscuits are cooked, let them cool; finally with the help of a teaspoon place the melted chocolate on the flatter part of the biscuit and cover with another biscuit. Wait for the chocolate to harden and serve the kisses of Dama.
