Preheat the blast chiller using the low-temperature cooking function set to 70°C. Once the desired temperature is reached, place the eggs on the rack and cook for 1 hour. After cooking, quickly cool them in the blast chiller for about 10 minutes.
Tips
Once cooled, the egg can be easily peeled and used to create your dishes: perfect on an avocado toast or, more simply, served with asparagus.
