Cold rice with pink grapefruit, avocado and shrimp

Ingredients

  • 400 gr of dwarf or brown rice
  • 225 gr precooked shrimp
  • 2 pink grapefruit
  • 2 avocados
  • Extra virgin olive oil
  • Salt and pepper

Proceeding

Bring salt water to a boil in a large pan and boil the rice for about 15 minutes (if the rice is brown the cooking time will lengthen). In the meantime, peel the pink grapefruit and cut into cubes, cut the avocado into cubes and drain the precooked shrimps from the brine, rinsing well with cold running water.

Once the rice has been cooked, drain it and cool it quickly in pre-cooled Freddy with the function of blast chilling (it is recommended to spread the rice on a stainless steel pan in order to decrease the cooling time). Season the rice with a little oil, shrimp, avocado and pink grapefruit.

Tips

With the blast chilling function you can store rice in the refrigerator for a whole week as fresh as just done.

You can also decide to freeze the boiled rice using the shock freezing function, and then store it in the freezer for up to 8 months. This way you will always have cooked rice, ready to be prepared in a few minutes with the dressing you prefer.
