In a bowl, sift together the flour, sugar, baking powder, and salt. In another bowl, whisk the eggs, milk, and melted butter. Combine the wet ingredients with the dry ingredients and gently mix until you get a smooth batter (do not overmix, or the pancakes may become chewy).
Heat a non-stick pan and lightly grease it with a bit of butter. Pour a ladle of pancakes batter into the pan and cook over medium heat for about 2 minutes on each side. Once cooked, transfer the pancakes to a tray and freeze them in Fresco® for about 90 minutes. After freezing, you can store them in the freezer in suitable containers for several months.
