Cut the strawberries into small pieces and transfer them to a large bowl. Add the sugar and the juice of half a lemon and mix carefully until smooth. Let it stand for about 5 minutes, so that the sugar can dissolve and the fruit releases its natural juice.
Pour the mixture into jars, pressing gently to remove any air bubbles. Close hermetically with the lid. Place the jars in Fresco®, set the cooking cycle to low temperature cooking at 75°C for 3 hours. At the end of the cycle, set automatic cooling.
Once ready, shake the jars well to distribute the jam evenly. Store the jars in the refrigerator and use them within 1 month to enjoy all the freshness and authentic flavour of the fruit.
