Watermelon pizza

Ingredients

  • 1 baby watermelon
  • 200 gr of Greek feta
  • 200 gr of red cherry tomatoes
  • 200 gr of yellow cherry tomatoes
  • 2 tablespoons of Taggiasche olives
  • 1 spring onion
  • Fresh mint
  • Extra virgin olive oil
  • Salt and pepper

Proceeding

Cut the watermelon into slices about 2 cm thick. Cut the tomatoes into cubes and season with oil, salt and pepper. Cut the feta into cubes and slice the spring onion thinly.

Divide all ingredients above 4 slices of watermelon, add Taggiasche olives and decorate with some leaves mint. Cool the watermelon pizzas in the blast chiller quickly so as to consume them cold.

Tips

You can blend the leftover watermelon and freeze it in the blast chiller, stirring it every 20 minutes with the tines of a fork to make a sorbet. You can in this way store it in the freezer for months.
