Ingredients for 4 people
500 gr of flour “0”
4 yolks
300 gr of butter
200 gr of sugar
A vanilla bean
A pinch of salt
50 gr flour for crumbling
Jam of different tastes
DOUGH PREPARATION
Turn on Freddy in positive abatement with the grill. Knead the ingredients of the pastry to obtain a dough, working as little as possible to avoid heating the dough. If you have it, use a mixer with mounted steel blades as if you were chopping something. Your pastry will remain cool and excellent. Wrap the dough in plastic wrap and cool in Freddy for 15 minutes.
You can make double dose of shortcrust pastry and freeze it in Freddy for an hour so you always have it ready.
FILLING AND FINISHING
Take two-thirds of the dough and roll it about half a centimeter thick and cover with a tart mouldXmuffin moulds. Put the jam on the pastry shell, cooled in Freddy for 10 minutes. In this way your jam will be cold, in the oven will not be overcooked and will keep the scent of ... fresh! Crumble the remaining pastry and blend it with the flour to obtain crumbs.
COOKING
Pour them on the mould and bake in the oven at 190ºC, for 10 minutes if they are mini tarts, for 20 minutes if the tarts are large. Since each oven has its own variety, wait for the crumbs to be golden.
THE SECRET
You can make two tarts and freeze one in Freddy for two hours, freshly extracted from the oven. You will always have a tart as freshly made.
