Ingredients for 28 mini madeleines

  • 2 eggs
  • 3 teaspoons of yeast powder
  • 2 tablespoons of extra virgin olive oil
  • 20 gr of melted butter
  • 2 tablespoons of grated parmesan cheese
  • 4 tablespoons of milk
  • 1 bunch of cherry tomatoes
  • 160 gr fresh goat cheese
  • Salt and pepper

Mix all the ingredients in a bowl with the help of a whisk (flour, yeast, oil, eggs, melted butter, Parmesan, milk and a pinch of salt and pepper). After obtaining a homogeneous dough, add the cheese, diced and stir gently.
Let to rest the dough in Freddy with the blast chilling function for 20 minutes.
In the meantime, wash the tomatoes and cut them in half. Pour a teaspoon of dough into each mold of the plate for mini madeleine and sink half a tomato. Bake the mini madeleines in the preheated oven at 220ºC for 4 minutes, then lower the temperature to 180ºC and prolong cooking for another 6 minutes.
