Preparation time: 50 minutes
Ingredients for 8 people
400 ml of gin
4 teaspoons of sugar
Juice of 2 lemons
4 passion fruits
Tonic water just enough
Some fresh mint leaves
400 gr beef tartare
1 spring onion
1 lime
3 tablespoons of gin
1 tablespoon of capers
1 bread
Peanut oil (for frying)
Extra virgin olive oil
Salt and pepper
STEP 1
Divide the lemon juice and sugar into 8 cocktail glasses and mix until the sugar melts.
STEP 2
Cut the passion fruits in half, collect with a teaspoon the pulp of half of the same and pour into glasses while stirring again.
STEP 3
Add gin and tonic water to taste. Decorate with half of the remaining fruits and with some fresh mint leaves and cool the cocktails in the blast chiller with the function of cooling drinks for about twenty minutes.
STEP 4
In a bowl mix the gin, with the oil, a pinch of salt, a grated pepper and lime juice creating an emulsion.
STEP 5
Clean the spring onion and cut into thin slices. Season the tartare with the gin emulsion and with the white part of the spring onions.
STEP 6
Slice the bread and toast the slices in the oven until golden brown on both sides.
STEP 7
Wash the capers well, dry and fry them for a few seconds in boiling peanut oil.
STEP 8
Garnish the tartare with the green part of the spring onions and with the fried capers and serve with the bread croutons.
